
IT'S ALL ABOUT THE CHOCOLATE!!!!!
Day in and day out, we are accountable with our food logs, we continue to workout 5-6 days a week, and we are committed to our journey and the path we have chosen to get fit and healthy. But we are only human, and when we have a craving once in a while just know that it is OK to give in and have a treat. We must keep our sanity and give ourselves a little taste of something scrumptious and decadent. Just keep in mind not to go all out and eat the whole pan of cookies or brownies or the whole pint of Ben & Jerry's.
When I get one of my cravings, I try to indulge in a treat that is not overloaded in sugars and fats. I still look for the healthier option, or try to lighten the recipe up myself.
This weekend I have found a recipe in Preventions Outsmart Diabetes Guide. It is still made with butter and eggs, which could be lightened up using egg substitute or a lighter butter. I have chosen to use whole grain pastry flour instead of the white flour, and you could not tell the difference!!! I made a whole pan, but I plan on sharing these with my co-workers on Monday so they will be out of my house!!! I love a dessert that is not too sweet but has a rich chocolate taste. So here is the recipe and remember use your better judgement when indulging in treats!!! You will be satisfied and you will feel stronger for being in control and only limiting yourself to a smaller portion!!! LEARN TO SHARE!!!
FUDGY CHOCOLATE BROWNIES
1 cup butter, softened
1 1/2 cups granulated sugar
4 large eggs
2 tsp vanilla extract
1 cup unsweetened cocoa powder (I used the dark cocoa)
1 cup flour (I used whole grain pastry flour)
3/4 tsp baking powder
1/2 tsp salt
1 cup walnuts, chopped
FROSTING
1 cup confectioners sugar
1/3 cup unsweetened cocoa powder
2 Tbls softened butter
2 Tbls lowfat milk
PREHEAT oven to 350 degrees F, coat a 13 x 9 foil lined pan with cooking spray
CREAM butter and granulated sugar in bowl with electric mixer on medium speed until light and fluffy. Beat in eggs one at a time. Add vanilla extract and beat until combined.
SIFT cocoa powder, flour, baking powder, and salt in a large bowl. add to butter mixture and beat until smooth. Fold in walnuts.
SPREAD batter in prepared pan and place on middle rack in oven. Bake 25-30 minutes or until knife inserted near center comes out clean. (I baked for about 40 minutes) Transfer pan to rack to cool until slightly warm.
BEAT frosting ingredients in bowl of electric mixer until smooth. Spread over slightly warm brownies. Cut into 32 squares once frosting is set.
The nutritional facts below is based on using white flour.
servings 32/per serving/164 cal/ 2 g protein/ 19 g carbs/ 1 g fiber/ 10 g fat/ 5 g sat fat/ 41 mg chol/ 120 mg sodium.
